Instructions
Heat olive oil in a large skillet over medium heat.
Add chopped onion and garlic, sauté until translucent.
Add ground beef, cook until browned and no longer pink.
Stir in diced sweet potatoes, cover and cook for 10 minutes until tender.
Add diced zucchini, paprika, salt, and pepper, cook uncovered for another 5-7 minutes.
Stir occasionally to combine flavors and prevent sticking.
Garnish with fresh herbs if desired and serve warm.
