Instructions
Heat olive oil in a large skillet over medium heat.
Add chopped onions and garlic, sauté until translucent.
Add ground beef and cook until browned, breaking it apart.
Add diced sweet potato, cover, and cook for about 10 minutes until tender.
Stir in diced zucchini and season with salt, pepper, and smoked paprika.
Cook uncovered for another 5-7 minutes until zucchini is soft and flavors combine.
Taste and adjust seasoning if needed. Serve warm.
