Instructions
Heat olive oil in the skillet over medium heat.
Add chopped onion and garlic; sauté until soft and fragrant.
Add ground beef, cooking until browned and cooked through, breaking it apart as it cooks.
Stir in diced sweet potato and cook for 8-10 minutes until slightly tender.
Add diced zucchini, season with salt and pepper, and continue cooking until all vegetables are tender.
