Instructions
Heat olive oil in a large skillet over medium heat.
Add chopped onion and garlic, sauté until softened.
Add ground beef, cook until browned, breaking it up with a spatula.
Stir in diced sweet potato, cover skillet, cook for 10 minutes until tender.
Add diced zucchini and smoked paprika, cook uncovered for 5-7 minutes until zucchini is tender.
Season with salt and pepper to taste, then remove from heat and serve warm.
Notes
Use ground turkey or chicken as a leaner protein alternative.
For extra flavor, add fresh herbs like thyme or rosemary.
